Ingredients

  • 8–10 chicken pieces, about 4 lbs, such as drumsticks, thighs, and breasts
  • Kalmes Famous 2-in-1 Steak Seasoning & Meat Tenderizer, used according to package directions
  • 2 cups buttermilk, or enough to coat the chicken
  • About 2 cups Superb Blend® Seasoned Breading Mix, plus more as needed
  • Vegetable oil suitable for frying

Plan ahead: Allow at least 30 minutes for the refrigerated buttermilk soak, plus preparation and enough time to fry in batches. Total cooking time depends on piece size and the number of batches.

How to Make Crispy Fried Chicken

1. Season and soak

Season the chicken with Kalmes Famous 2-in-1 Steak Seasoning & Meat Tenderizer according to the package directions. Place in a covered container with the buttermilk and refrigerate for at least 30 minutes. Follow the product label for tenderizing time; keep the chicken refrigerated during preparation.

2. Prepare your frying station

Use a deep fryer according to its instructions, or a large, heavy pot suitable for deep frying. Leave ample room above the oil for bubbling and displacement when chicken is added. Heat the oil to 350°F, using a frying thermometer. Keep water away from hot oil and never leave it unattended.

3. Coat with Superb Blend®

Pour the breading into a shallow dish. Lift each chicken piece from the buttermilk and let excess drip off. Press into the breading to coat all sides. Keep pieces awaiting frying refrigerated. Discard leftover marinade and any breading that touched raw chicken.

4. Fry in small batches

Carefully lower a few pieces into the oil without crowding the pot. Monitor the oil temperature and adjust the heat as needed, aiming for 350°F. Turn pieces carefully for even cooking. Smaller pieces may take around 10–14 minutes; larger bone-in pieces can take considerably longer.

Check doneness with a food thermometer: Every piece must reach at least 165°F in its thickest part, away from bone. Coating color and estimated cooking times do not establish doneness. If the coating browns too quickly, reduce the heat as needed and continue cooking until the chicken reaches a safe internal temperature.

5. Drain and serve

Transfer cooked chicken with clean utensils to a clean wire rack set over a baking sheet. Rest for about 5 minutes before serving. Do not reuse a plate or utensils that held raw chicken without washing them.

Tips for a Crisp Coating

  • Give each piece room: Small batches help limit drops in oil temperature.
  • Let excess buttermilk drip off: This helps avoid a heavy, wet coating.
  • Use a rack: Draining above the tray keeps the chicken from sitting in oil.
  • Serve freshly cooked: The coating is at its best shortly after frying and resting.

What to Serve with Fried Chicken

Pair with coleslaw, mashed potatoes, corn, or a fresh salad. Set out your favorite dipping sauces for a family-style meal.
